Gourmet is an adjective for something that tastes very delicious, perhaps a treat that is rare or hard to find, obtain, maybe a food that is pricey because it is so tasty.

In terms of using the word "gourmet" on a food label: A marketing ploy by food manufacturers to charge more for their particular products or brands. There is generally no discernible difference between those products and their competitors' products. It requires chutzpah to pull it off successfully.

In terms of using the word "gourmet" to describe a certain type of food in general: A term used in place of the phrase "an acquired taste" when you're talking about a food which most people are really not going to like the taste of. For example, truffles (the fungi, not the chocolaty things).



As someone said "gourmet cuisine" as it is commonly used (especially in prepacked/prepared ready to heat and eat meals) is just a marketing gimmick to imply that the product is "specially prepared using better quality ingredients with exceptional taste leaving you especially satisfied" after eating. Often however, it is not the case. In a culinary/restaurant context, "gourmet" is usually used for food as I described above. Also refers to foods not usually served at home/daily due to the special preparation/techniques and ingredients required.

The word gourmet actually defines a person and not a dish/cuisine. The common definition is "a person who cultivates a discriminating palate for the enjoyment of good food and drink" (epicure is used to define a even more refined "gourmet" or gourmand"). therefore a food that is "gourmet" is supposed to be of highest quality. "Gourmet" also used to mean "glutton" by the way.
