Looking for Vegetarian Enchilada Recipes?!


Question: Looking for Vegetarian Enchilada Recipes?
I'm going to a vegetarian pot luck on December 12th, and would like to bring vegetarian enchiladas. I'm thinking maybe beans, cheese, and tofu or something like that. I've never made them before though and was wondering if anyone has a good recipe to use or could point me in that direction.

Nettie's in Bellevue has an amazing Potato & Pea Enchilada on the menu (and they even make it for my wife and I with no cheese, though it's normally SUPER cheesy). The jist of the recipe is to cook up some onions, peas, and potatoes (either diced like hashbrowns, or even mashed), and then roll it in the tortilla with lots of cheese if you'd like, and then cover with red enchilada sauce and bake. If you're looking for protein other than the cheese you could add black or pinto beans to the pea/potato mix.



Some have posted vegetarian recipes. I would, however, HIGHLY discourage you from including cheese and/or other dairy/egg in the meal. Why? Not only do some people just abstain from those, but they're among the top 8 food allergens. There's nothing wrong with a delicious rice, bean, and portabello mushroom enchilada smothered in sauce!

When going to a pot luck dinner you should always bring something that you made before and now what the outcome would be. Don't use these hapless souls as guinea pigs.



bean and cheese... would be easier to just make burritos out of that.
