Question: How to tell if my almonds are rancid? They taste alright?
How to tell if my almonds are rancid? They taste alright but I have been storing them for quite awhile. Its up to a year in refrigerator (not freezer) then out for a month and now again in the refrigerator. They taste nice and seems no bad smell, but they seem to have shrunk a bit (or its my imagination) and have darkened at the back of the nut, but, they look completely normal, its not like its mold or something. So I am a bit dubious as far as I know nuts go rancid far before they are actually inedible. Thanks!

Shrinking and darkening of most things mean that they are either in the process of going off or have gone off. Be careful.



If they were rancid the minute you opened the container you would know, and almonds are fair less likely to go rancid in the frig, shrinkage is common as they dry out even in the frig, I use to buy 10 LB boxes of nuts for baking and to make nut butters for cooking or veggie garnishes.

If yours are roasted then the levels of fats and oils are more stable, raw nuts tend to spoil faster, at least that is what I found as a chef when I worked in 3 continents and here in Canada, the hardest nut to keep are pinenuts and peanuts when raw.



We still have some from last year, not in the fridge and they're okay. We pick them from almond trees growing wil where we live. You'll be okay.
