Hi. I'm a vegan from the South and with my grits, I sprinkle nuts on top. Since we are veggie people sometimes we have to get creative, so I suggest frying grits into cakes in your peanut oil and have tomato on the side. Also never underestimate the goodness of plain grits.

As a Brit I can't really help you with the grits. I've only encountered them once on my travels in the US and it was like eating someone else's bronchitis.

However, it sounds like you've got enough stuff there to make hummus, maybe? It's basically chick peas, lemon juice, and whatever flavourings you can throw at it - your taco sauce / hot sauce perhaps. Have a google for recipe ideas, see if you can find one that fits your cupboard?

I can't understand why you would want to eat grits...they remind me of zits, cooked. So I suggest you make hummas with the oil and chick peas and have a spoonful of peanut butter with maple syrup on top for desert.

Put your beans in with the grits and cook on stove top add seasonings to taste - I would also see if you can some veg to cut up the texture a little, you can use bricoli stalks etc. Check out lovefoodhatewaste.com

Nutritional yeast and hot sauce.
