Vegetarians don't eat meat, yet they still eat eggs/dairy products.
Vegans don't consume or use anything from animals. They don't eat meat, eggs, or any dairy products. They also avoid hidden animal ingredients such as lard, gelatin rennet, casein, whey, ect. and avoid products that contain animal ingredients or were tested on animals.

Vegetarians start not eating any meat (including fish and poultry) and animal fats/bones/cartilage (gelatin and animal rennet are good examples) and can go all the way up too not eating any animal products whatsoever (aka strict/pure vegetarian or what some people falsely consider veganism)
Some vegetarians will eat eggs or dairy or both. Also some might not wear leather or fur or use products made from animals but have not made the full step towards veganism.

Veganism is the lifestyle that embodies the idea that animals are not property. Basically what that means is you won't contribute to the exploitation of animals from your diet/what you use in and on your body to what you wear to entertainment to everything else involving animals. Veganism seeks to reduce and ultimately eliminate all forms of animal exploitation.

Raw "vegans" start eating mostly (75% or above) uncooked foods or foods "cooked" under 110-118 degrees Fahrenheit though many go 100% raw. However this would actually be a raw strict/pure vegetarian. This diet can be quite healthy as many foods are healthier raw and some are better raw.

Vegan because animals are not property

A vegetarian includes dairy and eggs in their diet. There are 3 kinds of vegetarians: Lacto-ovo vegetarian who eats dairy AND eggs (the most common type). Then there's the Lacto-vegetarian who will eat dairy but will NOT eat eggs. Finally there's the Ovo-vegetarian who will eat eggs, but won't eat dairy. All types of vegetarian also consume the bee product honey.

A vegan or a dietary vegan will not eat any products that came from the animal at all. This excludes eggs, dairy, and honey in their diet.
A vegan as a lifestyle will also not wear leather shoes, wool or woolen coats, silk clothing, or use any other type of product that contains sources from the animal such as most bar soaps, which contain the marine life fat called Sodium Tallowate for example.

Vegan

Most vegetarians are lacto ovo vegetarians. Lacto means milk and ovo means egg. These vegetarians don't eat meat (not even chicken and fish) but they will eat dairy and eggs. Vegetarians don't eat gelatin because it is made by using parts of slaughtered animals. Lots of yogurt has gelatin but not all of it so you would have to read the label.

There are lacto vegetarians who will eat dairy but not eggs and there are ovo vegetarians who will eat eggs but not dairy.

Some cheese is not vegetarian because it is made with animal rennet that came from slaughtered animals.

Vegans don't eat meat (not even chicken and fish) or anything that comes from an animal. They don't eat eggs, dairy or honey. They also don't buy things with wool, feathers, silk or leather because these things come from animals and they don't buy products that were tested on animals.

It's more than just vegan & vegetarian. Check it out.

In addition to what has already been said, an important difference is that vegetarianism is a diet, and veganism is a lifestyle. Vegans will not only not eat animal products, they will not use them either.

I'm a vegan.

vegan doesnt eat ANY animal products at all. no meat of any kind, no eggs, no dairy, and usually not even honey.

vegetarian eat eggs and dairy, but NO meat. vegetarian also separates into different types (lacto-veg, ovo-veg, lacto-ovo-veg... and so on)

Vegetarian - Will not eat anything that comes from killing animals but will use anything that comes from an animal if not killed - wool from sheep, honey from bees, dairy from cows, eggs from hens etc.

Vegans - Will not eat anything that comes from killing animals and also will not use anything that comes from animals - wool, honey, dairy, eggs

A vegan does not eat meat the same as a vegetarian.

However, additionally a vegan does not eat any product that came from animals even if the animal did not die. Such as milk, butter, cheese etc.
