Question: Easy Vegan Recipes..Help needed!?
Hey guys
im going on a camp and since im vegan
im stressing out, because i need recipes which will be easy to make and totally vegan
and preferably low cal :) >under 200
I need to be able to make this without the use of a oven, ill only have a gas cooker
so PLEASE HELP ME

you can find them at trader joes, bristol farms, etc. BUY THE BOOK SKINNY ***** IN THE KITCH its all vegan. im not a camper nor have i ever used a gas cooker, but i'm a fan of food on the go, these should help: Healthy Choice-Fresh Mixer-Rotini & Zesty Marinara Sauce, Larabars, luna bars, cliff bars. just make sure you bring something to boil water in and that opens the door to meals based on rice (brown not white) and pasta (whole wheat). bring raw veggies to chop up and flavor up your meals, like celery, carrots, lettuce, cucumbers, peppers, avacado, etc., and find a spice/seasoning you like (i like chili powder, [yellow] curry, salt, pepper, garlic powder, basil). i would pack a bunch of packets of my favorite hotsauce (Del Taco Medium) and also grab some S&P packets.. any other seasonings i would bag up in those small baggies you get at smoke shops. dont forget whole fruits.. apples oranges and bananas are lightweight and firm



2 tablespoons olive oil
1 small onion, chopped
1 cup celery, chopped
1 cup carrots, chopped
1 clove garlic, minced
2 1/2 cups water
2 cubes vegetable bouillon
2 cups corn
2 cups soy milk
1 tablespoon flour
1 teaspoon dried parsley
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon pepper

Heat oil in a large skillet over medium heat. Stir in onions and celery; cook until just slightly golden. Stir in carrots and garlic; cook until garlic is slightly golden.

Meanwhile, bring water to a boil over high heat. Stir in bouillon, and reduce heat to medium. When bouillon cubes have dissolved, add corn and the vegetables from the skillet. Cook until vegetables are tender. Add water, if necessary. Reduce heat to low, and pour in 1 cup soy milk. Stir soup well, then stir in remaining 1 cup soy milk. Quickly whisk in flour. Stir in parsley, garlic powder, salt, and pepper. Cook, stirring constantly, until chowder thickens, about 15 to 20 minutes.
