how to replace dried milk powder in bread machine recipes?!


Question: How to replace dried milk powder in bread machine recipes?
Hello there,

I am trying to veganize more and more of my recipes.

I make my own bread in a bread machine and most of the recipes call for dried milk powder. What can I use instead? What does the milk actually DO in the making of bread. Can you just use soya milk instead of normal milk or is there some point in the normal milk? What quantity of liquid milk would replace the dried milk? For example, most recipes use 1 1/2 tablespoons of milk powder.

I'm not sure what the purpose of the milk powder is, but there is dried soy milk powder. And you could certainly find some vegan bread machine recipes if you looked around.

Don't bother replacing it. Just leave it out. I make bread in my bread maker for a friend who is lactose intolerant and I just leave the milk powder out. Makes no noticeable difference in the bread. The milk is supposed to improve texture and flavour and improve keeping qualities. I also use olive oil instead of butter when making bread for the same friend and the bread comes out fine.

I have found that reducing the amount of water and making it up with something like almond milk, soy milk, rice milk is delicious.
