What goes well with lentils....?!


Question: What goes well with lentils....?
I am making lentils for dinner tonight and cant think what would go well with them....
PS - We are vegan....

Try the ones below, I cannot remember where I got some of them a few years ago.

Lentil, Date, Apple, Coriander & Garlic Stuffed Peppers
(red pepper, lentils, oil, garlic, apples, dates, coriander, cumin, olive oil, pepper. Cook lentils, then onion and garlic, dates, apples. Add coriander, cumin and pepper, stuff peppers cover in foil and bake 30 mins)

Lentil & Mushroom Bolognaise with Pasta
(lentil, celery, carrots, onion, tin tomatoes, mushrooms, salt, pepper, garlic, oil, basil)

Courgettes Stuffed with Lentil & Walnut Paté
(4 courgettes, 1tbsp oil, 1tbsp soya sauce. Paté – 135g lentils, half onion, garlic, 250ml stock, 25g walnuts chopped, 1tsp vinegar, yeast extract, 1 desserspoon chopped dates, 1tbsp rapeseed oil, 1tsp vegan milk and chopped fresh thyme. Oven 180c. Cook lentils to boiling point then rinse in cold water, back in pan add with onion, garlic and veg stock boil and simmer 20 mins. Drain then add rest of Paté ingredients and blend. Slice bottom layer of courgette so they sit on a plate. Scoop out courgette. Mix oil and milk sauce and brush courgette, bake 15 mins then remove and fill with Paté and cook another 20 minutes. Serve with warm salad, Oat Cakes and onion dressing)

Lentil & Aubergine Ratatouille with Baked Potato
(oil, onion, red pepper, garlic aubergine, courgette, tin tomato, herbs, season, lentils)

Lentil Croquettes
(1 cup lentils , 1 cup wheat flour , 1 teaspoon turmeric , 1 tablespoon coriander, 1 tablespoon cumin powder , 1/2 teaspoon salt (or to your taste) , 1/4 cup bell pepper, finely chopped 1 teaspoon red chili powder (or to your taste) , 1/2 teaspoon ginger (fresh or powder), Put the lentils in water and start boiling. As the lentils are boiling, in a separate bowl combine wheat flour, turmeric, coriander, cumin powder, salt, finely chopped bell pepper, red chili powder, and ginger. Also take out another dish and set it aside. Once the lentils are done, drain water and let cool for about 10 minutes. Take about a handful of lentils, being careful that the lentils are not too hot. Combine it with the dry ingredients in the bowl and shape it like a tapered cylinder or any other shape that suits you. Then set it aside on the dish that you took out. Repeat the process until all the lentils are covered with the dry ingredients. The dry ingredients will help you shape the lentils the way you want it. Take out a skillet and add olive oil or any other oil you desire and heat the skillet. Once the oil is hot, put in a few lentil shapes in the hot oil and leave it there for a minute until it turns golden brown. (Note: You are not frying the lentils. It is small amount of oil so it can turn golden brown.) Flip it and do the same for the other side)

A really hearty vegetable stew would be nice! Cut carrots, potatoes and leeks into chunks, along with onions and stock. Simmer on a low heat until the potatoes are softened, then add pepper and salt to taste, and hey presto! veg stew! :)
PS. It's especially nice served with thick, crusty, wholemeal rolls.

Roast vegetables with lots of garlic and lemon.
Courgettes, sweet potato, parsnip and cherry tomatoes. Squeeze the lemon over the veggies and then put the lemon in the roasting dish.
Sprinkle with salt and pepper.

I always just make Lentils ( with tons of veggies in it) and brown rice with some veggies on the side. :)

tomatoes are nice as lentil and tomato soup

l always cook lentils with rice.Taste great!
