Yes they do, that is why they are the nicest to eat and use in smoothies etc to sweeten things up.

Bec has the right answer. As the banana ripens the starches turn to sugar (fructose). Due to the high starch content eating green or unripe bananas can cause stomach upset. A banana is considered ripe when it is fully yellow with no green on the stem. Peak ripeness is golden yellow speckled with tiny brown spots.

A super-intelligent sciency friend tried to explain this to me once... I can't really remember all about it, but it's something along the lines of the sugar being broken down, so it's level is more concentrated, rather than it actually gaining more sugar...or something like that...

Yes they do, but the overall calories are the same. The starch already in the unripened banana turns into sugar as it ripens.
