Christmas dinner for a vegitarian?!

Question: Christmas dinner for a vegitarian?
I had to suffer through my first thanksgiving as a vegitarian. My parents aren't exactly compassionate on how little I could eat, other than desserts. Luckily, I get to spend christmas with my mom, who is more than willing to try and cook something for me. The only problem is that I have to find out what she can cook since we have the rest of our meat eating family over. Any help?

I would say you have little to worry about as a vegetarian (as opposed to vegan). Eat sides that are veggies such as mashed potatoes, green bean casserole, steamed veggies.
One of my favorites:
Layer zucchini, yellow squash, cheese and spaghetti Ragu sauce with veggies and bake it in the oven.
Do you eat any fish/shellfish? You can have shrimp cocktail for appetizers.
Spinach and artichoke dip, cheese balls and crackers, chips and salsa or guacamole are also good appetizers.

Why not help your Mom out and make a vegetable Lasagna. This is Oprah's recipes and there are a few others listed below it. You could probably substitute the precooked Lasagna noodles and prepare the veggies one day and finish putting the lasagna together the day before your planning to serve it. The lasagna and a nice salad would be a complete meal and the rest of your family can have their usual plus a side of the lasagna.

If you live near a Costco, you can check out the ingredients in their Vegetable Lasagna which is in the frozen section.

If you can't make or purchase the lasagna, just ask your mom not to add any meat products to her sides, except for those that have become a family tradition.

Don't stress!
Most veg(an)s know what it's like to live with those who don't show compassion for the vegetarian/vegan lifestyle!
During thanksgiving I always load up on the sides! Tell your mother that she doesn't have to cook JUST vegetarian! But make sure she knows that she needs to make a lot of vegetarian sides! Every holiday I make sure that no matter who I'm celebrating with cooks my favorite food(s) so I know that no matter what meat they decide to eat (yuk!). If you need some recipes you want to try out just google it, a really good way to find vegetarian cook books is to find a "Nature's Pantry" near you! They have a LOT of vegetarian/vegan/dietary cookbooks that taste yummy yummy yummy!

We're making vegan stuffed pasta shells with sauce, a green salad, fruit salad and 1 or 2 desserts. I really don't understand why you couldn't just eat all the veggie side-dishes. We always have like 4 kinds of vegetables, rolls, fruit and stuff, along with the nasty looking turkey for my parents.

And I only hear you talking about people cooking for you. I think you are totally capable of looking up recipes and making something yourself. I don't mean to be rude, but you need to do things for yourself.

This Thanksgiving my cousin and my sister's boyfriend are vegetarian but everyone else there are not. What works for our family is that we have many side dishes that do not have meat in it so they have many options and are still able to have their fill. For Example we had: Turkey and green beans cooked with bacon (which was ok for the boyfriend but not ok for my cousin, it just depends on what kind of vegetarian you are, whether that is ok for you or not) stuffing(no meat), potato salad (no meat) macaroni salad (no meat), corn (no meat), mash potatoes (no Meat), cranberry sauce (no meat), bread, and deviled eggs (once again, depends on what is ok for you)
So if you make a lot of side dishes without meat, you have alot of choices while the rest of your family can still eat what they want. I hope this helps!

im also a vegetarian! (and don't say suffer, you should be happy you aren't killing animals!)
well i would look up recipes online, or if you go to www.peta.com you can order a FREE vegetarian cook book/kit! I did (but its still in the mail). Well thank you for being a vegetarian and good luck! :D

me!

cook some pastas maby or if u still eat fish eat some fish with rice and a salsa i love to eat on the fish and rice it is made of lime celantro and onions tomatos salt and peper. or just make a seperate side dish for yourself.

If there is a vegetable lasagna available even the meat eaters would enjoy as a side as well as provide a filling satisfying meal for a vegetarian. Garlic bread is enjoyed by everyone as well.

How about, instead of giving your mum extra stress over two seprate dishes, use your brian and DON'T EAT THE TURKEY!

God, it's not that hard to figure out!
