If you are referring to green beans, peas, snow pea pods, broccoli, etc, yes they can be eaten raw, but some are not very tasty (green beans and peas). As far as the leafy greens like spinach, collard or turnip greens, spinach can be eaten raw, also Kale, but collard and turnip greens must be cooked to get the bitterness out of them.



Depends on what you mean by "green". Acorn squash is green on the outside, but should always be cooked in order to eat.

All vegetables may be eaten raw, but that does not mean they taste good or are as nutritious.
Most cucumbers and gourds can taste very bitter if eaten green/too ripe.

I think all vegetables can be eaten raw, they just don't always taste good
