Question: High-protein, vegan breakfast bars..?
I'm looking for a recipe for really healthy, high-protein vegan breakfast bars. Does anyone have one?

Mix equal parts peanut butter, wheat gluten protein (sold as protein powder in heath stores), and quick oats. Add some sweatner and/or chocolate powder if you like. You may need to add some water when you mix it (measure it in tablespoons at a time).

Form it into bars and keep it chilled.

Try the ones below, I cannot remember where I got them from. I tend to make them in large batches and store either in the fridge, air tight tins or at times have frozen them. It works out much cheaper than purchasing expensive vegan bars all the time:-

Peanut Butter Bars
(6tbsp peanut butter, half cup agave syrup, half tsp cinnamon, 1.5 cup oats, half cup walnuts. Combine and bake on 180c for 10 mins)

Granola Bars
(3 cups oats, 1 cup sultanas chopped, ? cup almonds chopped, 1tsp cinnamon, ? tsp salt, ? cup maple cyrup, ? cup water or apple juice, 2tbs brown sugar or alternative, 1tsp vanilla. Oven 160c baking sheet lined. Mix oats, sultanas, almonds, cinnamon and salt. In pan mix maple, water, brogn sugar to boil on medium heat until sugar has dissolved. Remove from heat, stir in vanilla and pour over oat mixture. Divide into 10 bars with wet hands onto sheet and bake 25-30 mins)

Apricot & Cashew Nut Bars
(225g / 8oz dried apricots, soaked overnight, 100ml / 4 fl oz vegetable oil, 5ml / 1tsp vanilla essence, 75g / 3oz cashew nut pieces, 75g / 3oz desiccated coconut, 75g / 3oz rolled oats, 75g / 3oz raisins, rind of 1 lemon, finely grated, 1/2 tsp ground cinnamon, a pinch ground nutmeg.) Simmer the apricots in their soaking water for five minutes. Drain & cool. Whisk the cooked apricots with the oil until very smooth. Mix in all the remaining ingredients. Transfer to an oiled and base-lined cake tin (28 x 18cm / 11 x 7inch) and bake at 400'F / 200'C / GM6 for about 20-25 minuntes until firm to the touch. Cool in the tin, then cut into 12 bars)

Apple, Oat, Sultana, Lemon & Walnut Bars
(700g apples, 75g sugar, ? lemon juice & rind, 40g marg, 30ml syrup, 100g oats, 25g sultanas, 25g chopped walnuts. Oven 200c. Put apples, sugar, lemon juice/rind in pan with 2tbsp water & cook until soft. Melt marg, syrup and rest of sugar in pan, stir in oats, raisins and walnuts. Make into bars and bake for around 20 mins)

Raw Seed Bar
(seed mix 25g each of pumpkin seeds, sunflower seeds, sesame seeds, hemp seeds, 75g linseeds. Ars 75g oats, 50g chopped dates, chopped apricots, grated coconut, 2tsp carob powder, 1tbsp brown rice flour, blackstrap molasses, 1tbsp agave or maple syrup, 2tbsp lime juice. Grnind pumkin, sunflower and sesame seeds in processor but not into putty. Grind hemp and linseeds in a coffee grinder or pestel. Mix both. Mix snack bar ingredients and add 4tbsp essential seed mix, molasses, agave syrup and lime juice then you can eat as they are or chill in the fridge)

Raw Bars
(cup dates mashed, mix in cup ground sunflower seeds, cashew nuts ground and raisins. eat as they are or chill in the fridge first)

Aval (Rice Flakes) Uppuma



Aval (Rice Flakes) - 200 gms
oil - 4 tsps
mustard seeds - 1/2 tsp
Urad dal - 1 tsp
Black pepper - 1/2 tsp
cumin seeds - 1/2 tsp
salt to taste


Soak aval in water for 1/2 hour.Heat little oil in a pan, add mustard seeds.

When it pops, add urud dal, whole black pepper, cumin seeds and salt. Drain the water from the aval and add it to the pan and fry.

You can mix curd with soaked aval if you like.



Ingredients I handpick for you.

raw sunflower seeds
old fashioned oats
flax seed
agave nectar or honey (to hold it together and not so bad sugar)
most fruit or dried fruit can go into it (cranberries would be a good one)
add additional nuts if you can afford. (nuts are too expensive for me these days)

I personally wouldn't bake it so I would get more nutrients. Wouldn't taste the best but would be "really healthy".



I don't have a recipe but I know the Clif builders bars are vegan and have 20 grams of protein.
