What is a good vegan recipe that meat-eaters will enjoy?!
Answers:
a vegetarian chili is always a hit. I would stay away from the "fake meats" just because meat eaters KNOW what real meat tastes like. Instead, try to choose a recipe that just isnt based around a meat or cheese.
breaded/fried eggplant or portabella mushrooms over pasta with zesty garlic tomato sauce with a side salad and garlic bread?
I feel like something fried is the way to go. Anything fried is usually a hit.
I don't know about this being an entrée, but I make this all the time for my dad (a meat lover) and he loves it;

I suppose if you make the filling you can turn it into anything you want, really.
There's also this very simple potato salad;

I haven't made it myself yet so I can't attest to the taste, but it looks good and who doesn't like potato salad? :)
I found a really tasty recipe that has potatoes in it! Cook well and let them enjoy! - http://showmevegan.blogspot.com/2008/06/…
