What am I able to eat as a vegan?!


Question: What am I able to eat as a vegan?
Hey guys. I was wondering what I could and couldn't eat because I became a vegan about a week ago, and was doing some research on it, and it says it varies from person to person. I, though, don't want to eat anything made from animals, wholly or partially and would love some advice :D thanks everyone

Hey! I was a Vegan for about a year...

I have to say it was very rewarding in that it made me look at food in a completely new way and I had lots of fun finding new recipes.

Anyway, what you can eat:

Tofu, TVP, any soy products (but have a look at the lable cause some of the stuff is really unhealthy cause of heavy processing i.e. look at the percentage of fat it has)

Any vegetable & fruit(fresh and dried) &nuts (whole & butters)

Grains : Rice, Tapioca, Couscous, Bulgur wheat, Buckwheat (YUM!), Oats etc.

Legumes: BEANS BEANS BEANS (but start off slow, cause they will cause gas until your digestive system gets used to it. Taking a good pre and pro biotic tablet will help! Also, knowing how to cook beans properly. Nice beans are: White beans, brown beans, lentils (Brown & green wont turn to mush, others are best used for stews, curries etc cause they loose their structure when cooked) & Chickpeas (my favorite).

Questionable products:

Honey - bees produce it, there are arguments pro and against it being vegan. Just use golden syrup, maple syrup, agave - just as good if not better.

Wine: Some wine making processes use animal products to sieve the wine (I dont remember exactly what they use, neither the less, it uses animal product to produce.

Wired stuff to keep a balanced diet:

Nutritional Yeast (e.g. Marmite) - full of B vitamins which you would be lacking in.
Nutritional Yeast Flakes - full of all kinds of things, surprisingly kinda tastes cheesy/nutty but looks a bit like fish food.

pancakes/waffles with maple syrup, fruit, and nuts
oatmeal with fruit/nuts
toast with nut butters, jellies, or 'butter'
bagels
tempeh bacon
muffins (blueberry, banana nut, chai, etc)
french toast (vegan version)
tofu scramble

Lunch/dinner
soups (minestrone, black bean, spicy tortilla, lentil, vegetable)
sandwiches (fake meat/cheese, veggie, pbj)
wraps
stir-fries
curries
veggie burgers
quesadillas/burritos (tortilla, rice, beans, fake meat, squash, mushrooms, tomato, corn, peppers, guacamole, hot sauce, etc)
casseroles
grilled portobello burgers
marinated grilled veggie kebabs
soba noodles with asian-style veggies and a bit of fried tofu
pasta dishes
pasta salads

I've found that my meals are much more interesting and varied now that I'm vegan. Learn to cook and you won't miss meat or animal products.
