how would I make vegan onion rings?!

Question: How would I make vegan onion rings?
preferably not fried. I have something called "french fried onion pieces" from Wegmans and of course yellow onions and flour (whole wheat) and the usual things. Any good recipes that are simple? I used to love the taste and haven't had them in years and if there is a low fat one, I'd love to take it.
