Question: I am canning Vegetables... how long will they last?
I've decided to can some fruits and veggies, how long will they keep until they go bad with out opening the can?

It depends on the quality of the can. The inside is lined with a chemical which prevents the food from spoiling. If the can is dented this lining can be damaged, exposing the food to the main material in the can and triggering chemical reactions between the two.

Canned foods will last at least two years, and as long as fifty or more years; but the quality will be reduced with increasing time.

if you have done a good job of sealing the containers they should be good for a very long time
if you notice the veggies' liquid getting cloudy or discoloring, I would not use them
little harder with fruit but I can remember very old fruit my mother had canned, still good after years
