I'd say that her being an passionate animal rights/liberation activist probably means she's vegan.

Vegan and a fan of Wicked.

I read it a couple years ago- but doesn't it say she stopped eating meat because she didn't know whether it came from Animals or animals? I wondered the same thing when I was reading it :)
So, although it doesn't go into detail I'm assuming she is vegetarian by default.
