how exactly can i make vegan bread?!


Question: How exactly can i make vegan bread?
like, make bread without eggs and milk. and let's say muffins, pancakes, all that. like, at least like upper 90% vegan. cuz if you use sugar to make these, that ain't vegan cuz it's made from bones or something. how about that? can anyone tell me how. i'm sick of the rising prices at the grocery store.

Bread is water, flour and yeast. Many recipes also call for sugar to help the yeast or make the dough slightly sweet. As long you pay attention to the ingredients I can not see why bread could not be vegan. I make bread that is nothing more then beer that I made, flour that I purchased, and sourdough I maintained. I add salt to help with the leavening. I do not add sugar at all. Keep in mind, making bread goes though allot of flour.

If it calls for eggs there are many substitutes you can use, depending on what the eggs purpose is in the batter. Luckily there is a very large group of people who can not eat eggs, so there are many alternatives. This ranges from things like applesauce to direct egg replacements. Because there are so many people who can not eat eggs, there are recipes all over the Internet about egg replacement.

Milk is generally something that is easily replaced with soy or almond milk. Really it depends on what the milk is for. Often you can simply use water.



For any recipe that calls for milk, soy milk and almond milk (even better! It's slightly thicker, which is good for cooking, and especially baking) may be substituted, and the baking will turn out great. There are plenty of other sugars/sweeteners to use in baking besides bleached granulated sugar-- organic cane sugar is one example. Other types are demerara, maple syrup, brown rice syrup, agave nectar, molasses, corn syrup, stevia, xylitol or erythritol. All of these re vegan. Eggs might be slightly trickier, but not much. Just takes a few seconds more thinking to decide which replacement is best! Basically, you want to change up what you use instead of eggs for the biding in baking, depending on what you're making. Most bread making that I know of doesn't use any eggs at all. For the recipes that do call for an egg, I make my favorite replacement binder by mixing small amounts of warm water and starch (corn starch, potato starch, tapioca flour, arrowroot) with a bit of ground flax seeds, and allow the mixed ingredients to sit in a warm spot for a few minutes. In some recipes you can use a mashed ripe banana. I don't suggest Ener-G egg replacer, which to my palette tastes horrendous. Some more good tips:

To start off there are vegan sugars out there. For example raw or cane sugar.
Milk replacements:
Almond Milk
Soy Milk
Hazelnut Milk
Oat Milk
Hemp Milk
Coconut Milk

Egg replacement:
2tbsp flax meal or ground flax seed and 3 tbsps water(let sit to jell up a bit) is equal to one egg
One small banana equals to one egg(this will add a slight banana taste)
Ener-G replacer
Soy yogurt or Coconut yogurt 1/4 is equal to one egg
1/4 cup silken tofu blended is equal to one egg(I think, I might be wrong about this one at least measurement wise)

If you are going to use butter you can replace with applesauce or Earth Balance



vegan bread recipe:
organic 6 cups whole wheat flour, 1 tablespoon yeast, 1 tablespoon organic brown sugar, 1 tablespoon salt, 3 cups of water.) Thats for two loaves by the way.

warm up 3 cups water (30 seconds in microwave is perfect)
dissolve yeast in it (1 tablespoon)
add 1 tbssugar (brown sugar, or vegan white sugar)
add 1tbs salt
add 6 cups flour 1 at a time.
kneed until soft and un-sticky, add more flour if need be while kneading.
put back in bowl and let rise for an hour and a half covered with a clean dishtowel in warm dark place (i put it in the oven not turned on!)
kneed again, separate in half and put into bread pans. let rise in pans for 45 min

bake at 370-375 40 min.

i make this all the time, it's delicious, nutritious, and vegan. good luck!
