What are some easy, healthy, good tasting, vegetarian recipes?!


Question: What are some easy, healthy, good tasting, vegetarian recipes?
Yes I know that might limit it a lot, but my family decided to start a family dinner night every Friday and we need some ideas of what to make besides just getting pizza or something. We want to make it healthy, because my dad and I are both diabetic. It also needs to taste good because I have a 16 year old brother that is still not too convinced that we shouldn't just get pizza. And we're vegetarians so obviously no meat. Dairy is fine, but no meat. Oh and it needs to be easy because I'm only 17 and still learning to cook. And my mom doesn't have a lot of time. Any suggestions of websites that are good? Thanks! :)

basmati rice (with some chopped cilantro in it), sauteed green bell peppers and onions, black bean and corn salsa, and guacamole... all topped with fresh shredded cheese YUM.

You could do some meatless ground "beef" if you want, but it would be healthier without it.

tofu salads any tofu salds there good but im not a vegitarian basically its lettuce tofu cheese ect....



My favorite is shish kebab. Mushrooms, squash, tomatos, peppers, eggplant, onions etc. Chunk them, or if they're small, leave them whole. Mix any herbs, salt and pepper you like into olive oil and brush over the veggies. Grill over medium-ish heat until they're done. Serve over rice is you like.

Baked Portobello mushrooms. Shred carrots, mushrooms, shredded eggplant and spinach--mix with some cottage or ricotta cheese plus minced onion and garlic. Clean the portobellos and brush with olive oil and sprinkle with balsamic vinegar. Place shredded mixture heaped up on the mushroom cap. Bake at 350 for about 10-15 minutes until heated through, then add some goat cheese along the top and place back in until the cheese is gooey and melty.

unfortunately we don't measure, so you'll have to do your own....but my vegetarian friends and I always come up with new stuff!
