Question: Can a raw foodist use dried herbs?
I was wondering if dried herbs lack certain nutrients, and I'm not sure how much mustard is cooked.

They are more condensed . A little goes a long way in flavoring food.

Yes. Herbs don't contain much in the way of nutrients. THey mainly contain aromatics, alkaloids, and other non-caloric/non-nutritional substances.

Mustard seed need not be cooked. Mustard leaves must be cooked or they are practically indigestible.

Yes. You are not acyually cooking them to dry them. The only nutrients you might lose would be a few water dispersibles, such as c or some B's. But as has been said already, you do not look to herbs that much for nutrition.

Dried herbs have the same nutrients as fresh, and dried herbs aren't cooked, their dried.
