Question: Are dried veggies good for your body and why ?
I am watching a program in Japanese and this is what they seem to be saying can anyone expand why it is good for you (they dehydrated the food and then ate it the next day or that evening .Thanks

Absolutely, dehydrating retains almost 100% of the nutrients. It is one of the best forms of food preservation. It's concentrated, giving it a higher nutrient density than most foods. And the salt and fat content is reduced.

Definitely not preferred option when fresh vegetables are available. In Mediterranean countries and Japan they do it because they need to preserve what is grown for a limited season need to be used throughout the year. That is why grape leaves and lemon are salted and preserved by these people.
I have seen the North eastern Asian Indians sun dry banana and using it.



Fresh veg is bettr than dried one
