To be vegan, the recipe is only required to not contain any animal products... this does not mean it will have any less sugar or carbohydrates (which are often what diabetics are concerned with)
Try making your own recipe, or purchasing products that are specifically made for diabetics. If you serve cookies that are not made for diabetics, you may do more harm than if you didn't offer any at all.
Another cool idea is to call a local Starbucks/coffee shop or bakery and see if they offer any treats that are specifically made for diabetic needs.
Also, if you aren't partial to baked goods, a veggie tray with dip might be a nice option for you to offer.. plus, it could be eaten and enjoyed by everyone else at the gathering as well.

I am vegan, but not only do I watch out for animal products, but I also watch my sugars and bad fats. There are many things that can be used as a substitute to avoid the bad glucose sugars. I personally use Stevia or agave nectar but be careful on the agave nectar because not all brands are created equal. I know that Stevia is safe for diabetics as for agave nectar you have to watch which one you buy because it still contains glucose and some contain less than others. I checked out the ingredients of 'The Alternative Baking Company's' cookies, and they are NOT diabetic safe. Cane sugar and organic sugars may be vegan, but they still are sugar! (There's also other ingredients that I wouldn't suggest ingesting in their cookies... *olive oil heated is bad, use saflower oil*) There is a fantastic cookie book that has a section about all the different substitutions you can use, as well as how to make your cookies gluten free. Has the BEST recipes in my opinion it's called "Vegan Cookies Invade Your Cookie Jar:100 Dairy-Free Recipes for Everyone's Favorite Treats" by Isa Chandra Moskowitz & Terry Hope Romero. I've seen it in just about every bookstore I've been to, they might even have it at your local library. Definitely worth checking out!

Tell you dad to read the book "21 days to a healthy heart" I got mine off of amazon for really cheap and they have other copies. It opened my eyes! It doesn't sound like a book for diabetics but it is and actually I recommend it to anyone! The author is Alan L. Watson. In the mean time he should NOT be eating any refined sugar at all! Nor should he eat any white flour or anything made with white flour. If you want to have something to share try some healthy lower glycemic index fruit salad to him. Cherries and grapefruit are the lowest, then pears, plums, apples, oranges and grapes. Bananas are high as is watermelon. You can use real whipped cream for blending it together perhaps but don't add sugar to it. Best wishes to your dad! Oh and Im sorry I forgot you are a vegan so the cream is out but just try the fruit then Im sure it will be great.
Having diabetes doesn't mean you can never have a cookie, it means that you have to monitor what you eat carefully. Let your dad know that you have cookies in advance so he will be able to fit it into his meal plan if he chooses.
Well honestly just because it's vegan doesn't mean it doesn't have a bunch of sugar... But companies to make diabetic friendly sweets. Maybe type it in google?
