Veggie stir fry with tofu is a great one that I love making all the time!
Also, soups...so many ways to make them! For what you want, you could add in some legumes, vegetables...things of that nature. My two favorite soups are vegetarian chili & kale/turnip/lentil stew.
TVP (textured vegetable protein, soy-based) is cheap protein you can use to make chili, "meat"loaf, or substitute for taco filling. There are other vegetable proteins that are also cheaper than meat and at least as versatile, so you don't have to overdo the soy thing. I love tofu because it tastes like anything you cook it in, especially curry, but like someone else mentioned don't overlook lentils. They come in different flavors and colors but all have a lot of protein and fiber. Just cook them in vegetable broth or water the same as you would white rice, and serve with rice or any grain to complete the protein. Also garbanzos (chick peas) are good in soups and salads, as well as the always popular hummus. You could eat a different plant protein every day and not get tired of them!
Combine your vegetable protein with any grain, but go easy on the white rice if you're concerned about keeping fit. Quinoa, which is a seed that looks like millet, is a complete protein in itself and very nutritious. It's not as cheap as the others but still easy to prepare and add to oatmeal, salads, soups or almost anything.

Bacon is very simple to prepare. Serve with a side of soy or gravy based toppings. Butt size will increase with additional bacon consumption.
