Question: Does anyone know of a tasty vegetarian Xmas option I can make?
I am cooking a pre Xmas roast for 6 friends next Sunday and one of them is vegetarian - ideally I am looking for something I can pre prepare the day before so that i don't get stressed out with managing roast chicken, pud making etc with also trying to make a vegetable dish. Any ideas gratefully appreciated!

As you are already doing vegetables with your non-veg roast the easiest thing would be a nut version of roast just making sure the gravy is veggie (no beef stock cubes)

When I am in a hurry, I cheat by using a nut roast mix from Holland and Barrett as a base and then extend it to make it special for the occasion. I would suggest adding some of the following for a Christmas roast: mashed cooked parsnip, grated carrot and apple, layer of slow-cooked mushroom in the middle which adds moisture - and a good dose of fresh herbs

Always works - just make sure the meat-eaters don't eat it all before the veggie gets a chance

wouldn't recommend chicken -most vegos would know that stringy texture ain't any kind of vegetable they ever had.
vegetarian lasagne is easy and can be prepared the day before. it's tasty but not super impressive. just google a recipe.
if you make enough side dishes (potatoes, a green vegetable/peas, salad) and some instant gravy that might be enough. Vegetarians with meat eating friends quite often are used to just eating the side dishes.
we often have pizza and salad for xmas dinner -easy with pita bread, tomato paste, vegetable toppings (capsicum, olives, tomato, onion, mushroom) and cheese. you could prepare this before hand and just stick it under the grill to melt the cheese just before serving

If you do a veggie gravy (vegetarian gravy granules) and avoid things like lard in the Yorkies, all you need is something to replace the meat and they'll be able to eat everything the others are having rather than making them feel like a pariah. For the meat alternative, a couple of veggie sausages / burger / nut cutlet sort of thing might suffice.

I'll be making a sunday dinner later today. Roast parsnips, carrots amd potatoes, boiled baby potatoes, onion gravy and slices of carved roast - all veggie. Far cry from a salad, hey?



make sure there are other things to eat like potatoes, squash, carrots, peas, etc for her to eat. call her on the phone and ask her what she wants for her main entree. tell her u arnt vegetarian savvy but want to do right by her. she will appreciate it! and you will get the 100% correct answer that way. she might just want to bring her own, potluck style.
if you don't want to ask her specifically, then just make sure there are some vegetarian side-dishs and let her fend for herself.

my uncle is married to a vegetarian and every year they just tell her it is not a real chicken and slather loads of gravy on it what they don't know can't hurt them
