Quick, cheap, easy vegetarian meals?!


Question: Quick, cheap, easy vegetarian meals?
I am just starting out as a vegetarian, after I learned about all the cruel things they do to animals in factories.
What are some quick, easy lunch and supper ideas?
I am in high school, so easy vegetarian lunches that I can keep packed for a few hours.

i am a vegan, and i have a great supper recipe. its super easy too. and itll stay good for about a week or so.

you need veggie ground round (or any other crumbles you like)
at least one pepper, diced
diced tomato
diced onion &/or garlic
throw in pretty much any vegetables you want, the moe the better, get as much vitamins as possible!
minute rice
chili sauce
and vegetable broth.

you just have to brown up the ground round, onions and peppers in a pot
add the broth
add your vegetables
simmer for about 25-30 minutes with the lid
then you add & stir in some chili sauce
add about a cup of minute rice & take the pot off the heat
cover the pot, and leave it for 10 minutes, and its done :)

i love this recipe, i make it all the time.
i like to switch it up and try all kinds of different vegetables or spices every now & again
enjoy :)



Get the Moosewood Cookbook or The Enchanted Broccoli Forest - both by Mollie Katzen. In those books are tons of recipes for everything from salads, main courses to desserts for vegetarians - there are eggs and dairy in some of the recipes. If you make the Marvelous Mushroom Moussaka for dinner then you can use the leftovers for lunches. These cookbooks work really well. Get yourself a Kool Lunch kit that can keep your cool food cold, and a large mouth thermos to keep your hot food hot. Imagine a nice warm chili with a corn muffin and a salad for your lunch time.

im also a high school veggie
but i take school meals and we have a lot of choice its fab
but ideas:
pasta salad in a tub: tomato or chilli sauce with extra veg, dried tomatoes and pecan nuts
egg sandwiches (i hate them but watever floats ur boat)
tofu salad sandwiches (dk, i just thought of that i dk if it works)
peanut salad sandwiches (made these as a tech project in primary school. super tasty)

Try out the Pasta Antonio recipe from www.quick-easy-suppers.com. The recipe itself has meat in it but you can leave out the meat and just use tinned tomatoes, onion, garlic and chilli flakes. The whole meal, serving 4, with pasta, will cost around £2, £3 if you have ciabatta with it!
