Date & Apricot Bars
(4oz Dates, 4oz Dried apricots, 100ml Soya milk. 4 Tbsp oill, 1oz brown sugar, 3oz Rice flour
1/2 tsp Vanilla essence, 1/2 tsp Baking powder, 2 Large Tbsp Date syrup. Place soya milk, rice flour, oil, vanilla, baking powder and sugar into a bowl and mix very well. Once it has mixed into a creamy batter add the dates, apricots and date syrup. Mx very well. Pour into a bowl and cover with plastic wrap. Place into a fridge for 30 minutes. Grease and flour a baking tray. Shape into bars and put in the oven 15 mins 200c)
Granola Maple Bars
(4 cups quick cooking oats, 1/3-1/2 cup canola oil or whatever you have, 1 cup maple syrup, 1 tsp vanilla, 1/4 cup each hemp seeds, hemp powder, raisins, sunflower seeds, pumpkin seeds, ground flax seeds. Preheat oven to 350 degrees, spread oats out on a baking sheet. Bake for 10 mins, stirring twice to prevent burning. Mix all other ingredients in a large bowl. Add in warm oats and mix well. Press mixture into a lightly oiled 9x13 pan, using a piece of waxed paper. They key here is to press really hard and compact the mixture as much as possible. Bake for 25-30 mins, until golden brown. Cool completely and cut into bars)
