Vegans: have I had a healthy day?!


Question: Vegans: have I had a healthy day?
Hey I'd like you to tell me what you think of what I ate today and critique it. Do you think this was healthy?...

-Two plates of jasmine rice with a can of soybeans and salsa on top.
-8 slices of fresh pineapple (including the centers).
-2 cups of hot mocha chocolate (vegan cocoa mix) made with soymilk.
-1 womens multi-vitamin
-1 calcium tablet
-1 vitamin C tablet
-about 3 tall glasses of water

Answers:

Well, you had a good start, but you kinda plummeted after the pineapple. If this is all you ate in a day, it's not really enough. You need more protein, the soybeans are good, but maybe you could throw in a veggie burger, or some tofu too.

Also, although you had a fair amount of pineapple, i'd add more fruit too. And you haven't really had any veggies, try eating some cut up carrots, peppers and cucumbers with hummus or dip that you like.

good for you for taking vitamins though!

No way is that enough food or variety.
Also, I would use a different protein that unfermented soy, which contains phytoestrogens, goitrogens, etc. Beans or lentils are a safer bet in my opinion.
You also need a bigger variety of vegetables and fruits. For fruit, I suggest making a fruit salad- strawberries, balckberries, kiwis, pineapple, apple, banana, anything you like, and keepign it in the fridge, just take a scoop when you want it. The only veggie I see is soybeans, so I think you should have a bigger variety- squash, greens, cruciferous veggies, carrots, sweet potato, etc.
You're also eating a lot of simple carbs (jasmine rice, pineapple, hot chocolate).



You're eating way too much simple carbs, and not enough variety is your diet.

It sounds like you like to experiment food-wise. You might try looking up some South Indian recipes, which are mostly vegetarian and vegan.

P.S. I thought vegans only ate stuff that "came naturally" from the plant, i.e., wasn't dug up... which is why (as I understand it) many vegans use asafoetida instead of garlic for flavoring (because you have to pull garlic out of the ground). So... what about pineapple... that is dug up out of the ground.... right? Or am I ignorant of vegan cooking and eating?

Where art thou veggies? By the way, take a b12 supplement too for energy, which is impossible to get in food for vegans.
