Question: Good vegan recipes that nonvegans will like?
I want to make my husband a vegan dinner-so that he understands that i(a vegan) am not just eating salad and fruit. What are good recipes that are also very filling? thanks:)

I don't have a recipe but I looove vegetable lasagna! You can go to www.foodnetwork.com to find a really good recipe and also allrecipes.com to find vegetarian lasagna. Sorry I couldn't be of much help!

Hey as a fellow vegan I can relate to other people's concerns. My dad and husband both eat meat, but they love vegan homemade tacos. All you do is buy vegan crumblers and season them with a homemade taco seasoning (the pkg of taco seasoning contains milk) like say cayenne pepper, onion powder and garlic. Meanwhile heat your taco shells in the oven.
Grate some vegan cheddar cheese, dice lettuce and tomato, and onion, and put vegan sour cream on top. Serve sliced avocado on the side and or vegetarian refries.

I second the chili idea! My family is vegetarian so when people come over, we need something that our meat-craving relatives will like.

They all loooove it, they say it's just as good as regular chili, perhaps even better. We always serve our chili over rice (it's a northern thing, I think :P) with a dollop of guacamole on top. Excellent served with cornbread too. The chili can also be made into a "taco salad." http://blog.lindseyyeo.com/?p=189

You can always make veggie burgers too, or even spaghetti (with vegan meatballs!) Vegan meatballs = http://tofufortwo.net/2008/05/08/picnic-…

I have a good one. I make this all the time and it is very satisfying.

Southwestern Black Beans: http://expandingcircle.wordpress.com/ent…
served over Brown Rice
with Corn Cake: http://expandingcircle.wordpress.com/bre… (or any corn bread)
and a veggie dish

Vegan pot pie or casserole!
Vegweb.com has some great vegan casseroles, dinner pies, stir-fries, and other AWESOME meals.
Or, if he is into ethnic foods, a ton of Middle Eastern and Asian recipes are, or can be made, vegan.

I think really anything hearty would teach him that. I am currently in the process of convincing my dad that raw foods are not limited to fruit and salad (I made a raw apple pie for Thanksgiving. It was from this cookbook http://download.jonsiandalex.com/jonsian… But do be wary of your utilization of tofu and seitan, as many people just don't like it (not sure why. . . It's awesome!) or fake meats (a general turn-off to most meat eaters).

Also, veggie burgers will most likely have him thinking you don't eat anything "real."

Vegan.

this one form food network is awesome...no one in my family misses the meat and the sauce is so fresh tasting
Ingredients
nocoupons

* 1/4 cup extra-virgin olive oil, plus more for drizzling
* 4 cloves garlic, sliced
* 1 1/2 pounds ripe tomatoes, diced
* 4 tablespoons chopped fresh basil and/or parsley, plus more for garnish
* Kosher salt and freshly ground pepper
* 1 cup ricotta cheese
* 1 large egg
* 2 tablespoons grated parmesan cheese, plus more for garnish
* 6 sheets no-bake lasagna noodles
* 1 carrot, peeled into ribbons
* 1 zucchini, peeled into ribbons
* 3 1/2 cups baby spinach
* 1/3 pound mozzarella cheese, thinly sliced

Directions

Heat the 1/4 cup olive oil in a large skillet over medium-high heat. Add the garlic; cook until golden, 1 minute. Add the tomatoes, 1 tablespoon herbs, 1/2 teaspoon salt, and pepper to taste; cook until saucy, about 5 minutes. Transfer to a blender and puree. Return 1 cup of the sauce to the skillet and reduce the heat to low; reserve the remaining sauce.

Meanwhile, mix the ricotta, egg, parmesan, the remaining 3 tablespoons herbs, 1/2 teaspoon salt, and pepper to taste in a bowl.

Place 2 lasagna noodles over the sauce in the skillet. Layer half of the carrot and zucchini on top; drizzle with olive oil and season with salt and pepper. Cover with half of the spinach, half of the ricotta mixture, a few pieces of mozzarella and 2 to 3 tablespoons of the reserved tomato sauce. Repeat the layers, ending with noodles. Top with the remaining sauce and mozzarella. Cover and simmer until the lasagna is cooked and the cheese melts, 20 to 25 minutes.

Let rest for a few minutes before slicing. Garnish with more parmesan and fresh herbs.
