Vegetarians Christmas dinner?!
becuase i'm thinking of doing so just for the one day, last years Christmas dinner was disgusting.

you are NOT a vegetarian if you do that.

What did you have that was so bad last time? Why don′t you try looking for some better recipes this year? I always have nut roast and veggie stuffing on the side and I love it, plus you can have veggie gravy with it & cranberry sauce...
NUT ROAST
Ingredients:
1 medium onion
25g (1oz) vegan margarine
Mixed nuts (preferably toasted not fried) peanuts, walnuts, almonds, cashews etc.
100g (4oz) wholemeal bread
300ml (1/4 pint) vegetable stock
2 tsp Marmite
Dried mixed herbs
Salt and freshly ground pepper
Method:
Chop the onion and sauté in the butter until transparent. Grind the nuts and the bread together in a food processor until quite fine. Heat the stock and yeast to boiling point, then combine all the ingredients together and mix well. The mixture should be quite slack. Turn into a greased shallow baking dish, level the surface. Bake in the oven for 30 minutes until golden brown. It′s really good!!
RED RICE, CRANBERRY AND CHESTNUT STUFFING
Ingredients:
225g (8oz) Camargue red rice
1 x 75g pack dried cranberries
1 x 200g cooked and peeled chestnuts, halved lengthways
1 large red onion, peeled and roughly chopped
2 tablespoons olive oil
? teaspoon dried sage
? teaspoon parsley
2 tablespoons of balsamic vinegar
Salt and freshly ground salt and pepper
Method:
Bring a medium pan of salted water to the boil, add the rice, cover and simmer for 40 minutes, until tender but with a little ‘chewiness’. Sweat the onion in the olive oil in a covered frying pan until really soft and translucent, about 20 minutes. Remove from the heat and set aside. When the rice is cooked, drain in a colander and get rid of any excess water by patting dry with paper towels. Spoon into a large bowl, add the cook onion, cranberries, chestnuts, sage and parsley and mix well. Stir in the balsamic vinegar and season with salt and pepper. As don't actually have anything to stuff, put into an greased ovenproof dish cover with foil and bake for in a preheated oven 180oC, 350oF, gas mark 4 for 20 mins until piping hot.

Does your family make the meal or you for yourself?
My advice is don't plan ahead to eat meat.. if that's a feasable option for you then I question why you are vegetarian. Really, it's up to you and your personal moral values (depending i suppose on why you became veg in the first place).
Personally, when I went vegetarian, I changed almost nothing at christmas. I just don't eat the turkey or stuffing or gravy, and everything else my mom makes it already vegetarian.
