Generally anything except white potato and any kind of beans (if they come out a tin they're ok). Try adding grated sweet potato or pumpkin to your salad or raw broccolli - once you've tried them raw you'll be eating them that way all the time - they're so good! :)
Any vegetable can be eaten raw, it just is your preference between softness versus crunchiness. Also, not cooking them tends to keep more nutrients in an calories down (as you don't cook it in oil, butter, etc.) If you do cook any vegetables, broiling them keeps the most nutrients locked in them... takes a little while to get used to the texture though. If you don't cook them, just be sure to clean with a vegetable cleaner first. (wouldn't recommend potatoes or pumpkins raw)
Raw white potatoes are actually poisonous. You can eat celery, carrots, lettuce, tomatoes, purple onions, cabbage, mushrooms and many other vegetables raw, but not potatoes.

You can eat most any vegetable raw, it just depends on your own personal likes and dislikes.

the ones that taste best are carrots, peas, peppers [and i like raw mushrooms - but i know a lot do not]
Whilst I quite like raw mushrooms, I have read that it is better to cook them (some are slightly toxic and cooking breaks down the toxins).
Lightly steamed vegetables with a bit of soy sauce or other seasoning are healthy too.
