What does it mean nutritionally when a vegetarian craves meat?!

Well if you take a step back and look at all cravings most are aimed at unhealthy things. (like sweets and cigarettes). When you crave healthy things it isn't mental it more physical. Like you don't really know you crave water until your mouth gets dry. You don't crave sleep until your body's energy is depleted.
Also there is constant pressure on vegetarians to eat meat. You can't be around the normal world without seeing meat, smelling meat, and people haggling you to eat meat. So it may not be a craving to eat meat but a craving to fit in. :)
Nutritionally, it probably means you need some protein or some iron. Remember where proteins are concerned, you need complete proteins, which are not normally present in plant based foods. As a result, you have to combine your plant proteins so that together, they offer you the nutrition of meat.
Probably because it's your "natural" diet. Humans evolved as omnivores. We're designed to eat meat, otherwise we wouldn't need B12. You obviously have done well without meat, but that might not stop the cravings for what your body is designed to eat.
Probably because you have eaten meat before, I have been a vegetarian for 1 year,(I used to eat chicken, not very often though, but no other meat) and I have been craving meat lately, because I used to eat it.

It probably just means that you want protein or iron or even that you generally just are experiencing a temptation to try meat again because it's appealing to you now.
