whatever veggies you like. you can choose any vegitable really. as long as it's sliced or spread.
you can put spinage on a sandwich to make it healthier for you.
yes, then buy the focaccia bread and the red pepper spread and real pepper slices on it.. lettuce, onion? whatever you like or don't like you put or don't put ok?

Cucumber, Lettuce, Tomato, Peppers, Red Onion, Olives, Mushrooms, Pickles, Hot Peppers. To name a few.

When I make a veggie sandwich, I put on baba ganouj (spread, it's delicious), spinach, tomato and cucumbers. Tastes amazing :)

Broad beans if you can get them from a lebanese are amazing. Sun-dried tomatoes as well. If you don't mind cheese (esp. mozzarella if heated) that would be tasty, but if its a vegetable only then maybe olives? Mushrooms. :)

I would put cheese, lettuce, tomatos, peppers, cucumbers, onions, eggplant, whatever else you like.

baby spinach (raw tastes like lettuce)
sun dried tomato
fresh tomato
romaine lettuce
jalapeno pepper
roasted bell pepper
