Question: Vegans: how healthy was my day?
Hi, here's all I had today. Feel free to critique, I'm curious to know what you think...

5 cups coffee, black
Vegan nachos: (tomatoes, black olives, guacamole, two scoops beans, corn chips, "mozzerella" cheese, and jalepeno sauce)
Lg iced tea
"Chicken" sammich on 14 grain wheat, "mozzerella" cheese, and vegannaise.
1 can chunky vegan vegetable soup
2 servings baked shoestring French fries
1 green apple
3 or 4 tall glasses spring water

I totally agree with Becky. You will be healthier if you shop more in the produce section and stay farther from the freezer. Processed food often has a lot of salt, and sometimes mystery ingredients. If there's much more sodium (in mg) than the calories, it is high, since by coincidence we need ~ 2000 calories and no more than ~ 2000 mg sodium. It's not hard to find processed food with 3 to 4 x the sodium as calories. There is decent processed food, especially vegan, but you have to watch out.

See if you can skip the fake cheese - add more flavor with salsa and so forth. Soon I think you will find cheese to be kind of gloppy and gross.

Soup is so easy to make with those veggies you're going to buy. Easier if you buy some veggie bouillon paste/cubes.

Have potatoes instead of fries, though potatoes are still not a nutritional powerhouse unless you go to sweet potatoes. Brown rice would be better than white potatoes.

You can bread and fry tofu to make a sandwich (http://expandingcircle.wordpress.com/ent… This tasted so much like chickenwich the second day that if I hadn't made it myself I would have been very worried.



it looks like your eating enough. raw and living vegetables are the best thing for you. try soaking raw sunflower seeds in water overnight. its really good for preventing colds and flus. also its a complete protein and loaded with vitamin e.
try having a couple brazil nuts a day, they help keep a normal metabolism



Not very healthy, lots of processed foods. More fresh fruit and vegetables- way less caffeine.



Try to cut back on the processed foods.



you probably need more fruit but otherwise sounds pretty good.



after all that, you didn't need a peppermint tea or something?
