Question: I want to bake my friend a cake, but she is allergic to everything. I need help with a good recipe.?
Or perhaps changing one to fit her needs.
First off, she is a vegan, but she does eat honey, so I already know I'd like to substitute that for sugar (because she can't eat sugar), but I'm not sure how much (does anyone know the conversion?).
Second, she cannot have gluten, so basically all flour except rice flour is out. (Again, I need help with the conversions).
Third, she wants to stay away from oil, but I think its more about minimizing the use rather than cutting it out completely. And then the obvious (because she's a vegan), no eggs, no dairy.
Anyhow, I'm trying to help her stay with her vegan lifestyle because she will have health problems if she doesn't, so any help would be great. :)

GIve up the idea of a cake. I don't see how you can make a cake without those ingredients.



Okay....You can't use:
-Milk
-Eggs
-Sugar
-Gluten
-Oil (minimize)

I know some substitutes....

MILK- Almond/Soy Milk
EGGS- http://www.pioneerthinking.com/eggsub.ht… (take your pick!)
SUGAR- Agave Nectar http://www.allaboutagave.com/substitutin… (whatever kind of sugar is in the recipe, folllow this conversion)
GLUTEN- Flour=Rice Flour
OIL- Use applesauce. 1TB Oil=1TB Applesauce. Try 1/2 and 1/2, Oil and Applesauce.

Do a vanilla cake, because chocolate has milk.

Find a recipe, plug in your substitutes, and voila!

I have tried other recipes by gluten free goddess and they are good. This one looks like it fits the bill for all criteria except the sugar so you will have to work with the honey. I think I would add it last and keep adding until the texture and taste seem right.

Baking will be quite difficult without all those ingredients. Maybe you should consider putting together a creative fruit basket.



With the things you can't use I think you are going to have a hard time baking a cake. It will probably be a big flop.

First off, it's very kind of you to go through such effort for your friend. Few people these days are so considerate.

You can swap of applesauce for oil - use half the amount of applesauce you would use for oil. There are other options, such as yogurt, but obviously that's not vegan. You can use any fruit puree actually, and pumpkin as well.

Eggs can be replaced by either blended silken tofu or ground flax seeds mixed with water. Tofu gives a fluffier result, while the flax seeds add a slightly nutty aroma. You can also use banana. Conversion rates are:
1 banana = 1 egg
3 teaspoons ground flax in a little bit of hot water = 1 egg
1/4c tofu puree = 1 egg

Edit: chocolate cake can be made with just unsweetened cocoa powder; also, baker's chocolate that is pure cacao doesn't contain milk either. Just make sure you get the unsweetened dark chocolate.

I just hope you know you're gonna be having a hard time with this.

I think it would be better to ust use a vegan sugar brand- Whole Foods, Florida Crystals, Wholesome Foods, Jack Frost, Country Cane, Supreme, and Southern Belle. All turbinado sugars, beet sugars, date sugars, or raw sugars are vegan.
It might be a bit more expensive, but it is the same as regular sugar, so your family could use up the rest- it wouldn't go to waste.
Substituting honey or liquid sweeteners for sugar means you would have to cut down on liquid (oils, vegan margarine, plant milk, etc), which would throw off what those liquid ingredients do.

You could also make a raw vegan desert, which are usually made with a date and walnut crust, not flour.
