Healthy, vegetarian, bean-free soups?!


Question: Healthy, vegetarian, bean-free soups?
I have high uric acid levels, and might develop gout. I cant eat meat or beans. I love sou, and I was wondering if you know of any soups that are vegetarian, bean-free, AND healthy. I'm 14 years old and this is a tough change for me. Please help! Thank-you.

Hi, my favorite soups are:
-Butternut squash, carrot and peppers,
Or
-Parsnip and onion.
For either of them you just cook up a big batch of the vegetables, add some stock then put it all in the blender. You can play around with the ratios of each vegetable until you get it just right, but the great thing about them is that they taste great however they're made. They're also loaded with nutrients.

This is a good question because it seems like all my soup recipes have beans or legumes for proteins. In addition to the good suggestions for seasonal vegetables, butternut squash (or pumpkin) and corn soups, you could get away with adding a handful of lentils or garbanzos. I read that they aren't as bad for gout patients as animal sources of purines and are OK in moderation. I'm not a doctor though - you'd probably want to get some more professional opinions on that.

I like spicy pureed roasted pepper soup in the winter. It warms you up. And for carrots, celery and corn I either use curry or Provencal spices. Winter vegetables that are awesome in soup are celeriac (celery root), turnip, parsnip and rutabaga. They are all totally underrated. I am not sure about the uric acid or purine content of them all though.

Contrary to popular belief, eating purine rich vegetables does not increase your uric acid levels. Beans are OK.

Eat a healthy diet, mostly plants. Don't be afraid of beans or spinach or other purine rich vegetables. Ever try quinoa? it's a good source of protein and can be added to soups, salads, all sorts of stuff.

Red meat increases your uric acid level, as does dehydration, so drink a lot of water.. maybe 3+ liters a day for an adult.

I have had severe gout attacks in the past. I test my uric acid level several times a week, so I know what raises it and what lowers it.

If you can have lentils then lentil soup is really easy and tastes really good! Or try carrot and parsnip or pumpkin. Basically you can put any vegetable in a pan with some chopped onions and garlic (frozen veg is fine to use and super quick!) - add enough water to just cover the veg and bring to the boil. You only need to boil the soup for about 5 mins and then blitz it up using a hand blender. Add a couple of stock cubes and experiment with herbs and spices and you're good to go! Obviously use vegetable broth in any soup recipe that calls for chicken broth
