Hi. Things like pasta with tomato and herb sauce are really easy to make and can be enjoyed by anyone. It's also really simple to prepare; Just boil the pasta for 10 minutes then mix in the sauce.

Curry is another easy choice. Just fry onions and garlic for 4 minutes, then mix in chopped tomatoes, tinned beans and curry powder and serve with brown rice.

Ratatouille is made by cooking peppers, aubergine and courgette in chopped tomatoes until soft.

Jacket potatoes are good too, just stick them in the oven for an hour or so then serve with baked beans and salad.

Alternatively you could make your usual meals but replace the meat with TVP, beans or nuts. Most things can be adapted to become vegetarian so hopefully you can still enjoy all the meals you used to.

Vegetarian lasagne is always good! buy pizza bases and make your own veggie pizzas, stir frysetc

Or, why not compromise and use fake meat products. This depends where you're from, in UK we have quorn, fake burgers and sausages etc. Also depends on whether hes veggie depending on principle or if he just doesnt like the taste of meat (if he doesnt like taste/texture of meat then maybe he would hate fake meat too)/ But you can buy soya mince etc and make bolognaise or any other meat based recipe. Yes its not exactly like real meat...but im a meat eater and i enjoy both!

Make sure you invest meal stater crumbles by Morningstar, this is vegan ground beef. Now it depends on the person sometimes they don't even want to eat something that resembles meat but if he has no problem this will work. With this I make tacos, enchiladas, lumpia, sloppy joe's and nachos. Great thing about crumbles is that you don't have cook it like ground beef, just throw it in the pot add the taco seasoning, enchilada sauce, or sloppy joe mix into the pot with it and you're good to go. Now for me I don't dump all the taco seasoning or sloppy joe mix in, I just use enough to match the amount of crumbles in the pot or otherwise it may have to much seasoning. Other meals I make are meatless meatball subs, you can find this at whole foods or earthfare store I prefer Nates Zesty Italian Meatless Meatballs. I also use these meatballs for our sweet and sour meatball meal. You can also make spaghetti, find a good spaghetti sauce (which maybe expensive, but worth it because it will add flavor) I normally get a garden mix with zucchini and garlic, throw in some cheddar or Parmesan cheese which ever you prefer and some cheese garlic bread. Another family favorite are my fried bean burritos which include refried beans (be careful because some refried beans have pork oil or something pork mixed with it) cheddar cheese, yellow rice, onions & tomatoes (or you can use a good salsa & throw it in there) Then fry it or eat it without frying it. to wrap it all up here's my list:

tacos
enchiladas
lumpia
sloppy joe's
nachos
meatless meatball subs
spaghetti
fried bean burritos
sweet and sour meatballs

I've included a link for 1.00 of morningstar crumbles or any items off their product line (print limit is 2)
As well as a link on lumpia it's like spring rolls but we eat it as a meal with wild rice & use La Choy sweet and sour duck sauce to dunk the lumpia in, and another link for the sweet and sour meatballs (again I use meatless with Nate's), and also the meatball subs! Just make the necessary modifications.
*Side note for me I can't use the crumbles in everything b/c it does has a certain taste but when I use it with certain seasoning you can't really tell. Good Luck!

That depends on your tastes. There is no reason for a non-vegetarian not like something simply because it doesn't have meat in it. I have cooked for dozens and dozens of non-vegetarians and the food disappeared very quickly. Make dishes you normally would make but without the meat. Things like:

Veggie lasagna
Veggie stir fry over rice
Homemade veggie pizza
veggie stew
pasta w/ sauce
veggie fajitas
veggie tacos
bean chili
bean and cheese enchiladas
