As vegetarians, with growing bones, your children have many options with the dairy. Kids love macaroni and cheese. They may also like these vegetarian meals:
Green bean casserole
Cheese pizza
Egg sandwiches (mayonnaise, scrambled egg, and pickles)
Homemade fries and ketchup
Bean tacos
Grilled cheese and tomato soup

Vegan

Disguise healthy stuff like pureed vegetables in stews etc, soya chunks are good also you can liquidise pulses just to thicken stews and soups up. Fried tofu or quorn strips are good also sweet potatoes- roast or made into chips.
Any healthy veg can be liquidised also fruit smoothies and soya yogurts and loads of stuff like onion bajis healthy pizzas etc - you are doing a brilliant thing as this way of eating helps health so much.
It is just more of a challenge to be inventive and get lots of ideas from websites etc so you dont end up eating the same stuff all the time. Forward planning also v important and yes it is harder to be a veggie or vegan but worth it I think!

life long vegetarian now v healthy 65 year old!!

my son is 6 and will eat the morningstar chicken nuggets or patties but not the burgurs. lite life makes a very passable cold cut made from soy in turkey or ham flavor that has also been a hit. ive put the ham on ham egg and cheese sandwiches or grilled cheese with ham with success. in my opinion, if they are eating cheese and eggs, and getting additional protien from soy or other beans in the form of soy meat or milk then everything will be fine. i also add apple to just about anything that has cheese in it. quiche, omelettes, grilled sandwiches, mac and cheese with soy bacon crumbles is one of my favorites.(bac-os is actually a vegetarian product. albeit artificially colored) vegetarian lasagna or stuffed shells is a great way to get sauce into them. when i make lasagna i tend to not put extra veggies in, im just glad my son is eating tomatoes in the form of sauce and i dont want to push my luck. i recently tried making tacos from soy crumbles and it went over very badly. no amount of velveeta could get my son or husband to eat it. i have however, put the crumbles in sauce ( for the stuffed shells) and they didnt notice, which to me is the same as two thumbs up. anyhow, good luck. it sound like if your son prefers veggie hot dogs to a fattie real dog youre job is that much easier

See if they'll eat quinoa. It's high in protein and has all the essential amino acids. I like using it in place of rice. It sort of pops when you chew it, which kids sometimes find fun.

Or try making veggie pizzas with them. You can make your own dough pretty easily, then top with sauce and whatever veggies you want (artichoke hearts, zucchini, eggplant, whatever). Putting something on a pizza seems to somehow make it more appetizing to kids.

My niece and nephew loved it when they came over last weekend! I made mine with veggie sausage. Just substitute the sausage for your favorite vegetarian brand or just leave it out entirely!

MorningStar sells some pretty good veggie burgers. They also have veggie sausage, veggie chicken, veggie bacon, and even veggie lasagna.

morning star black bean burgers :)

Your kids don't like meat at all? Or are you forcing them to become vegetarian. If so, not a good idea.
