Any good vegetarian slow cooker recipes without tomatoes?!


Question: Any good vegetarian slow cooker recipes without tomatoes?
I want to use my crock pot more but tomatoes are bothering my son. It's tough enough to find vegetarian recipes and nearly everything calls for tomatoes.

Cauliflower, Potato and Chickpea Curry

Ingredients (use vegan versions):

1 small to medium onion, chopped
2 bulbs garlic, minced
1/2 inch piece ginger, minced
1/2 head cauliflower, separated into small florets
1 medium potato, diced
1 - 14 ounce can chickpeas, drained and rinsed
3/4 cup coconut milk
1 cup apple sauce, or to taste (optional)
1 teaspoon cumin
1 teaspoon curry
1 teaspoon thyme
1/2 teaspoon coriander
1/2 teaspoon tumeric
1/4 teaspoon cayenne pepper
Salt and pepper, to taste
Cilantro, optional, to garnish

Directions:

1) Boil water and steam or boil the potato and cauliflower.

2) Set crock pot to low and add the chickpeas, spices, coconut milk, applesauce, and steamed potato and cauliflower.

3) Saute the onion for five minutes, or until translucent. Add the garlic and ginger and cook for two minutes. Add this mixture to the crock pot.

4) You can eat this right away but I let mine sit in the crock pot for hours. If you want to eat it right away you don't need to use a crock pot.

Instructions:

Place all ingredients into a slow cooker or crock pot and cook on medium for 3 hours.

white hominy ,cabbage,potato,carrot,onion(big chunk just for flavor) a cap full of canola oil
dash of salt,and add any other veggie that you like only one more don't want to change the flavor
much. cook for about 3 hours or until all cooked



You can make lots of stuff in the crock-pot just substitute The meat for more vegetables and spices add potatoes . don't forget the spices or seasonings and onion .
