Question: Quick, easy, vegan meal ideas?
I'm looking for some vegan meal ideas that don't take a long time to prepare and have a good amount of protein. Can anyone help me out?

I have one :)

This is a really filling dinner which can be eaten hot with vegetables and gravy or cold with a salad. As it takes an hour in the oven to cook, you can bake potatoes at the same time.



1 tin baked beans

4 oz. (100g) bread crumbs

4 oz. (100g) vegan 'sausage' mix, e.g. Sosmix.

1 onion.

Mixed herbs.



Preheat oven to Gas Mark 4 / 180 °C / 350 °F.



Mash the baked beans in a bowl and stir in the bread crumbs. Leave for 10 mins. In the meantime, chop the onion and fry for a few minutes. Add sausage mix, onion, 2 teaspoons of mixed herbs and salt and pepper to the bowl. Mix well and place into a greased loaf tin. Brush the top with oil and bake for one hour.



Serves 3 - 4



How about a vegetarian chili recipe. Most are easy and quick and freeze great and are full of protein. I even like to make the recipes that take a little longer to make and freeze it in portion sizes for future meals.

Heres one:

Spinach,(veg) tomato(fruit), almonds(protein)...
Basil and sage(herbs)
You can do what you want as far as cooking them goes, e.g fry/put in a wok, even grate the almonds on top of the salad.

A quick one that I like is marmite pasta... but if you 'hate' marmite this won't be a good option.
I just cook the pasta and some red onion and then after while it's still hot I mix in some marmite in for the flavour.

I'm not the best of cooks.



i love tofu scramble!
its super easy and i think its sooo yummy on toast

firm tofu
onion
soy sauce

brown the onion in a frying pan then, put the tofu in and mash it up so it looks like scrambled eggs, then cook that for about 4 - 5 mins then add the soy sauce.
then serve on toast :)



Roasted red pepper hummus and sliced avocado on whole grain whole wheat bread. Super quick and easy.

Cook some potatoes on an engine block that over heated.
