Easy to cook, easy to pack vegetarian potato recipes?!


Question: Easy to cook, easy to pack vegetarian potato recipes?
I'm from an Asian family, so I eat a lot of rice. I'm kind of getting tired of that so I want to see what I can do with potatoes. I'm looking for easy to cook recipes that are easy to pack for lunch as well (I tend to eat my lunch at school). I'm also vegetarian (but not vegan), so, no offense, but please don't bother to post recipes that have like bacon bits or ham or something as an important ingredient. Recipes with eggs or dairy are fine though. (Sorry for the pickiness, but the last time I tried asking for veg recipes, people gave me links to recipes that weren't.)

It's easy to get bored of foods you always eat, sometimes you just need to dress them up a bit. If you ever get bored of potatoes you should try fake lunch meats. Many grocery stores now offer a variety of meat alternatives so you can still enjoy sandwiches and other foods that may seem boring without the meat. Anyway, I hope you find some good recipes to try =]

A simple and delicious one is a Baked potato with American Cheese and Broccoli.

Also you can make a potato & egg scramble with cheese and broccoli. Like a scrambled up omelette.



umm let me put it this ways.....
take potato in a baking tray and add some onions,carrotts and cream salt and pepper and bake till 20 minutes and then take potatoes out and roast em for another 10 minutes....thats all



I absolutely love Taco Bell's new "crispy potato soft taco" and I think I can make something similar at home. Here's what I'm gonna do: Wash some red, gold or white potatoes (thoroughly, because I'm not going to peal them.} Boil until almost soft but not quite. Heat some olive oil in a frying pan or Fry Baby, and while it's getting hot cut the potatoes into thick slicaes and the slices into squares. When the oil sizzles a drop of water, I'l fry the potatoes 'til their outsides have a crispy brown shell and then drain them on paper towels. Now they're ready to go inside a burrito wrap or a crunchy taco shell along with lettuce and other things like "baja sauce" or ranch drassing. grated cheese, mushrooms, etc. Easy to eat with one hand "on the road."
