Here are some tips, you also want to use wondra flour or a lighter professional pastry flour (it will make it less heavy)



I don't know, but Amy's Kitchen makes great vegan chocolate and orange cakes.

Ener-g is a company that has vegan egg replacers.

You can use vegan margarine with powdered sugar and vanilla or lemon extract for frosting. Or, you can use some melted vegan chocolate.

I leave out the apple sauce, as I usually don't have it at hand, and add more yogurtinstead. Plus, I don't use and electric mixer, I beat it by hand.

Other recipes I tried from the vegan blog "Holy Cow" turned out light and fluffy as well!



Sifting is key! As is a good recipe. Invest in a good vegan dessert cookbook (though you can find a precious few good recipes in other vegan cookbooks). Try to use only natural ingredients, instead of a bunch of different substitutes.
