Are my potatoes safe to eat?!

Question: Are my potatoes safe to eat?
A few weeks ago I peeled a bunch of potatoes, only using some to cook right away. I placed the remaining peeled potatoes in a large freezer bag, sqeezing as much air out as possible and placed them in the fridge.
Outside of them turning their usual color shortly after peeled, they appear to be ingood shape. They are not soft, or shaped differently.

Are they safe to use in tonights dinner?

Yes, they seem safe to eat

They should be safe. But they will not taste as good, and do not be alarmed if the potatoes have a brown discoloration after they are cooked. That often happens when raw potatoes are stored at too low a temperature, like in the fridge..

They should be safe, though the may not taste quite as good. You're best off leaving the un-used ones unpeeled and in a dark, dry area till you're ready to use them.

they oxidized, next time if u peel potatoes u ned to get an acid such as lemon juice to prevent them from turning brown, they r safe though

Yes you're fine!
