Are there any good recipes for making mung bean desserts?!
Can I use them in place of other beans. say for instance in a cake I found calling for pinto beans?

There is a Vietnamese dessert called che ba mau that uses mung beans. It's a layered dessert: one layer of sweet red beans, a layer of sweet mashed mung beans, and a layer of agar jelly. It's topped off with sweetened coconut milk. It might not sound good from my description, but trust me, it's delicious. I'm sure you can find a recipe online.
But I'm really not sure about using them in place of pinto beans. The texture might be different.
