BQ: How long have you been into the healthy eating lifestyle? & what made you switch over?

My goodness! Your favourite vegetarian chilli is so close to mine! I like to throw in heaps more veggies though; carrots, celery, red and green capsicum along with some squash and cannellini beans. I also use burghul to add extra wholesomeness and texture.
I also like stuffed vegetables, eggplant, zucchini, with pearl pearly and quinoa. Since we've just come out of winter, I'm used to whipping up hearty soups and stews as well shoved with any vegetables I can get my hands on.
I suppose I've been getting gradually more into the healthy lifestyle since I went vegetarian a few years ago. I think actually I've just become more interested in what I'm eating since then, and where it's coming from. Another one of my favourite things is sourcing it all locally and cooking to the season.
Hi amy. IDK how well I can answer this since I was a junk food vegan and am just learning how to eat as a healthy vegan, but here's one of my favorites:
Rainbow pasta
Season with Italian dressing
Boil a few garden tomatoes to blanche them, dice and add to pasta
1/2 or whole can of garbanzo beans (depending on how much pasta you made)
Optional additions: flaxseed powder, crushed black olives, roasted garlic cloves, and/or sprinkle with white sesame seeds.
BQ: Lacto-ovo Vegetarian for 2 years, Vegan now going on 6 months.

I went vegetarian about 11 years ago but I've been vegan for soon to be 5 years, I went vegetarian due t health issues (doctor recommended a serious diet change) then after research I got into it so I kept doing it then decided to become vegan after meeting three rescue hens from a poultry farm (Sesame, Teriyaki and Fried)
Usually I just like to microwave Healthy Choice meals. And some whole wheat spaghetti with tomato sauce and mushrooms.
BQ: I don't really know...I just started eating healthier one day I guess. I don't really miss burgers that much. But I still love pizza. Just with olives and mushrooms and lots of cheese. I somehow became addicted to mushrooms.
I'm not going to say that I'm a heath nut b/c I'll be lying but i do like my share of healthy Vegetables like Broccoli, Corn, Lettuce, Tomatoes, Green Beans.
