Question: Are egg plants high in carbs or low in carbs?
Answers:

It's a fruit. Therefore, it has "good carbs". It's not like it is processed white flour or sugar. or anything unnatural. That's what I look at-- If something is natural and how much so. I try to avoid anything with white flour, white sugar, corn syrup, high fructose corn syrup, partially hydrogenated oils, hydrogenated oils and anything that looks as though it was created in a lab by humans and not in nature by God. To me, that's more important than calories or carbs or any of those other silly diet things.



If you do a quick search online you will find the nutritional information for eggplant:

Per cup (cubed) eggplant has 8 grams of carbs, 2 of which are fiber. I would say it is neither high nor low in carbs.
