Question: Need ideas for vegetarian meals? Please help?
Starting last Sunday, I've been trying a meat-less diet since red meat really screws up my digestion system. I'm loving it so far. I feel a lot more energetic and I've lost 6 pounds. The problem is this the first time in my life I have seriously attempted the vegetarian lifestyle. I have zero vegetarian cookbooks and I haven't had any luck finding good recipes online.

For breakfast I had three whole wheat pancakes topped with a cottage cheese/blueberry jam mixture. It was pretty good. For lunch I'm going to have a few MorningStar sausages with sauerkraut and a side of sauteed zucchini, squash and onions in a garlic butter sauce.

I have no idea what to make for dinner. I will be going to the store later today. Hopefully I can get some good ideas from your answers! Thanks!

-Spaghetti with porta bella mushrooms. Portabella mushrooms taste a lot like meat.
-Plantain turnovers with rice and beans.
-BBQ tofu sandwich with greens and sweet potatoes. To make tofu, make sure you slice the block into thin pieces and pat it down with a towel to drain out the water. Fry the greens and add salt, pepper, and other seasonings you like. You can buy canned sweet potatoes and microwave or steam them.
-Baked beans with ground crumbles(Boca or Morningstar Farms).

Boca, Morningstar Farms, Lightlife, Amy's Kitchen, Annie's Homegrown, Quorn, Tofurky, Yves, Tofutti, and Worthington are brands of vegetarian products that can be found at whole food/health food stores and Pathmark, Stop & Shop, Foodtown, and Shop Rite supermarkets.

My favorite thing to make is a veggie burger: Get some oats, eggs, and potatoes, and veggies you can grate like zucchini, squash, eggplant, etc.
frozen chopped spinach and mushrooms and onion and garlic also work well in it.

The oats, eggs, and potatoes make up the base of it. Get one or two potatoes and grate them, then cook them mostly through on a skillet. Put it in a bowl with a cup or two of oats. Add in the extra veggies that you want, grate them first though if they can be grated. Saute some onions and garlic if you want that in it too. Add the spices that you want to the mixture. When it is cool enough to work with, add in one or two eggs and mix everything well in the bowl. Then take out some and form a patty and cook it in a skillet.

I am an Indian, and i know alot of yummy vegan dishes. Now this recipe is what we call "veg burger" in india.
take two potatoes, boil and mash them. take some peas, boil them and mash them too, with the potatoes. now add salt, pepper, 4 cloves of crushed garlic, and a li'l crushed ginger, and a tablespoon full of corn floor and mix everything together in a bowl. not make two-three small cutlet-shaped balls and deep-fry. take them out when caramalised and crispy. you can eat then just like with ketchup or you can put them in a burger bun with mayo or ketchup. yummy!!!
