Impressive vegan or vegetarian meal?!
He is coming home for the holidays and I have that long to make him want to be vegetarian. He has challenged me saying that if I can convert him, thats great.
So I want to impress him with some delicious homemade vegetarian or vegan meals. And I don't want him to leave thinking "that was pretty good for no meat". I want him to leave feeling like its the best meal he's had in a while. Any ideas?

Rich, most people don't eat vegetarian because they weren't raised to, and are simply unaccustomed to it.
Your rant presupposes that meals must have some component of meat or faux meat to be appealing, which is a comment made in ignorance of all of the many flavors and textures of plant-based foods that humans are equipped to enjoy, AND of the asker's friend's openness to trying new dishes.

Vegetarian meals are bad. That's why normal people don't like them. No vegetarian meal will ever seem really good to someone who can still remember what bacon tastes like. If this weren't true, normal people would be eating that stuff already.
