I personally love anything published by Isa Chandra Moskovitz and Terry Hope Romero: Vegan With a Vengeance, Appetite for Reduction, Veganomicon, Vegan Cupcakes Take Over the World, Vegan Cookies Invade Your Cookie Jar, Viva Vegan. Anything by Sarah Kramer and Tanya Bernard: La Dolce Vegan, Garden of Vegan, How it all Vegan, Vegan a Go Go. Also books such as The Joy Of Vegan Baking, THe Voluptuous Vegan, Vegan World Fusion Cuisine, Vegan Planet. Also if you're into raw food check out anything by Ani Phyo.

Rose Elliot is the Goddess of vegetarian cooks and I've got about half a dozen of her books on my shelf.
Meals in Minutes, The Bean Book, Vegetarian Supercook, and Vegetarian Express are my favourites. They've never let me down. I've got my fingers crossed that Santa will bring me her New Complete Vegetarian for Christmas.

I don't know if it's the best but I highly recommend a newer one called Party Vegan. It shows you what to cook for very holiday & special occasion, but I just use the recipes on a daily basis. Everything has been absolutely delicious... and I'm not even fully vegan.
