Actually it's chlorophyll. Not bad for you at all. But the chlorophyll indicates that the potato has been exposed to sunlight. And where the potato has been exposed to light is where a natural toxin in the potato (solanine) becomes concentrated at harmful levels. So, never store your potatoes on the counter. Always keep them in a cool, completely dark place.


Solanine is a natural defense mechanism of the potato to ward off fungus and pests. It will also be triggered when a potato is bruised, so if your potato is at all damaged or bruised, discard it.



The green color is actually caused by high levels of chlorophyll, which by itself is harmless. But it is also a sign that levels of solanine, which is produced at the same time as chlorophyll, have increased as well. Solanine is a toxin that can cause nausea, headaches and neurological problems. If there is only a small amount of green, cut it away. I've done it many times with no ill effects. It IS bad for you and you should eat the green on potatoes in small amounts. Large amounts will harm you.

According to the Wiki article on potatoes, solanine "may cause headaches, diarrhea, cramps, and in severe cases coma and death."

However you have to ingest large amounts of it and poisoning from it is very rare and is usually happens when people eat a lot of unripe potatoes or make tea from the leaves.

Yes, it can be. Best to cut it out or if the potato is very small throw it away.
