Eggplant suggestions for eggplant hater?!


Question: Eggplant suggestions for eggplant hater?
I can't stand eggplant but I'm determined to keep trying, can anyone suggest a lacto ovo vegetarian recipe/idea that isn't moussaka, goulash or ratatouille?

I have one in the fridge that needs using, I know to salt it first, it's the texture I don't like,

The only eggplant dish I can stand is eggplant parmesan (be careful not to use real parmesan, as it contains animal rennet.) It's also decent shredded or diced on pizza.



Have you tried an eggplant parmesan? Any recipe online will likely do you well, but remember to slice it very THINLY before you bread/fry it... keeping the slices as thin as possible will help to avoid any "mushiness" in it (as I despise mushy eggplant in anything myself). You can then layer two pieces together in your dish to create more bulk, but without succumbing to textureless ickyness. :)



Why eat it if you hate it? You don't have to.

Try baba ganoush. If you hate it, scoop it into a cute container and bring it to the next party you go to.

The benefit of this is that it totally gets rid of the texture.

so what i do usually, (i dont like eggplant either much, but its really good for u) i cut up the eggplant in little tiny strips, and i kinda take out a little bit of the middle part, with the seeds and stuff.
then i put them on a cookie sheet and brush them with some oil. make sure the strips are really thin. then cook them in the oven until a little cooked and brown.
you can put salt on if u want. probs at 350 would do it.
then i put them in a pasta, you can get vegan spelt pasta, and vegan cheese and then cook up some oigon and put it together in the pasta, with garlic, cherry tomatoes and ur eggplant and vegan cheese. its soooooo goooooood!! try it!!!

While I commend you on your tactics, I have to say that in my opinion, eggplant is one of the most overrated veggie in the world. No matter how I have had it served to me, it still is a tasteless sponge.
Try this recipe.
It is the only thing that ever came close to making me think nice thoughts about eggplant.

Try frying it. Make a batter with flour, salt, pepper, and seltzer water. The carbonation keeps the batter light. Thinly slice the eggplant in rounds and put on a paper towel. Sprinkle with salt. Then dip in batter and fry until golden brown. I shallow-fry in grapeseed oil.



Spoon out the insides and stuff it. I like brown rice or pearl barley with quinoa.

It's like hummus, but this one uses grilled eggplant.
Another eggplant beauty is chinese Eggplant Hunan Style with steamed rice.



Slice it thin, brush it with olive oil, salt and pepper it and then throw it on a hot grill. It will surprise you and is the most simple of preps.

Check alton brown's eggplant recipies. Some are very eggplant centered, but many I doubt you will even know it is in there.
